Relief Society Pandemic Activity: No-Bake Oatmeal Cookies


I have a friend from our ward who used to bake oatmeal cookies. It becomes my favorite that I wanted to bake it but it stops me because I don’t have an oven. However, I realized that I don't need an oven to have oatmeal cookies. This no-bake oatmeal cookie recipe is delicious, nutritious, and super easy to make too! We made this during the COVID-19 lockdown. Agreed with my counselors, we conducted an online cooking activity for Relief Society sisters. ACTIVITY PREPARATION I made an announcement a week prior to the activity day through our ward’s FB group page and sent text messages for reminders. Asked the sisters to prepare the ingredients listed in the announcement and the materials needed that I texted to them. Did we ask for a budget from the Bishop? We chose not to ask for a budget because we have another online activity where we want to use our budget for that event. Those who attended the activity may have or may not have prepared the ingredients and were welcome to join in the ZOOM conference. They voluntarily bought their ingredients in a small amounts. We made sure this will be expensive. COOKING PROCEDURE 1. Whisk the dry ingredients together. In a bowl, combine dry ingredients. Just the oatmeal, flour, baking soda, raisins, and salt. Do not include the sugar, please. 2. Mix the wet ingredients together. In a separate bowl, mix brown sugar, vanilla, egg, and butter. 3. Combine the wet and dry ingredients. 4. Scoop cookie dough balls. About 1.5 Tablespoons of dough per cookie. This is not so large a cookie because we will cook this in a pan. Flatten the cookie dough. 5. Fry. Place a non-stick pan to medium heat, and place wax paper on top of the pan. Turn the heat into very low heat. Please the flatten cookie into the pan and cover it. After 12 minutes, the cookies are done. Remove it from the pan and let it cool.

TIPS AND TRICKS: We will not use oil in frying. Wax paper will not burn and it will prevent it from sticking to the pan. To check if the pan is ready for cooking, feel the heat in your palm. If you cannot stay for a few seconds, it means it is ready to cook. In my pan, 4 scoops of cookie dough are just enough. Be careful removing the cookies from the pan. The cookies are still soft because it is still hot.
